Mussels and oysters are bivalves, but choosing between them is a menu decision rather than a contest. Mussels work especially well in broths and pasta; oysters offer their own range of baked, grilled and other cooked preparations.

How the eating experience differs

Cooked mussels provide a tender bite and a savory cooking liquor. Oyster texture and salinity vary substantially by growing area, size and preparation. Shell appearance can help identify obvious quality problems, but appearance alone cannot establish raw-shellfish safety.

Choose the dish first

  • For a pot with garlic broth, use live PEI mussels.
  • For an oyster-specific recipe, choose the appropriate size and format in the Oysters collection.
  • For a mixed menu, prepare each shellfish according to its own instructions rather than using one timing for everything.

Raw versus cooked

Oysters are often served raw, but that custom does not remove the risk of foodborne illness. Cooking shellfish thoroughly reduces foodborne-illness risk compared with eating it raw or undercooked. Follow current public-health guidance for raw and cooked shellfish, especially when serving people at increased risk of severe foodborne illness.
