Bluefin Tuna vs. Bigeye Tuna: Taste, Cuts, Mercury & Buying
Bluefin and bigeye are different tuna species with different fat distribution, culinary uses and mercury guidance. The most useful comparison starts with the actual species and cut rather than a generic “ahi” label.
Flavor and Texture
Bluefin tuna includes lean akami as well as fattier chutoro and otoro. Fat content varies greatly by cut. Bigeye tuna is typically firm, deep red and moderately rich, making it suitable for steaks, searing and some raw preparations when the specific product is intended for raw service.
Mercury Guidance
FDA/EPA fish advice places bigeye tuna in the “Choices to Avoid” category because of higher mercury levels. That chart is specifically aimed at people who might become or are pregnant or breastfeeding and children, although FDA notes that everyone can follow it. Bluefin is not listed as a separate entry on that chart, so do not substitute Bigeye mercury guidance for Bluefin or vice versa.

Bluefin Stock Status Is Species- and Region-Specific
It is inaccurate to describe all Bluefin tuna simply as “endangered” or “heavily overfished.” NOAA currently reports Pacific bluefin as not overfished and not subject to overfishing. For western Atlantic bluefin, NOAA reports that the stock is not subject to overfishing, while the population level is currently listed as unknown.
Cooking and Raw Service
For cooked tuna, choose the cut based on fat content and thickness. For fully cooked fish, FDA food-safety guidance uses 145°F in the thickest part. For sushi, sashimi, tartare or other raw preparations, use only a product specifically intended and handled for raw service; “sushi-grade” is a commercial term rather than a universal safety guarantee.
