Fish Roe Sushi Guide: Ikura, Trout Roe, Tobiko & Masago
Fish Roe Sushi: Ikura and Other Roe Styles
Fish roe appears throughout sushi in different sizes, textures and preparations. Salmon roe, called ikura in Japanese, is especially recognizable for its large orange eggs and pronounced pop. Farm-raised trout roe and smaller roe such as tobiko and masago serve different roles in sushi.
For salmon roe specifically, start with our Salmon Roe (Ikura) Guide and Red Caviar Collection.
Common Roe Used in Sushi
| Roe | Typical sushi use | Texture |
|---|---|---|
| Ikura (salmon roe) | Gunkan, rice bowls, garnish | Large eggs with a pronounced pop |
| Trout roe | Gunkan, garnish, rolls | Usually smaller than salmon roe |
| Tobiko (flying fish roe) | Roll coating and garnish | Small and crisp |
| Masago (capelin roe) | Rolls and garnish | Very small eggs |
Exact size, color, salt level, and texture vary by species, cure, and producer, so avoid judging quality by a single measurement alone.

How Ikura Gunkan Is Made
- Prepare seasoned short-grain sushi rice and let it cool until warm.
- Shape a small oval of rice.
- Wrap a strip of nori around the rice so it forms a cup above the rice.
- Spoon chilled ready-to-eat ikura into the nori cup.
- Serve promptly before the nori softens.

Important: Ready-to-Eat Roe vs. Raw Roe
Do not confuse cured, ready-to-eat salmon caviar with Unprocessed Salmon Roe. Raw unprocessed roe is sold for further preparation and should not be presented as a ready-to-eat sushi topping unless it has been appropriately processed.
