Use this collection of cooking ideas to choose a method, then follow the linked recipe for quantities and preparation. Fillets, steaks, cheeks and whole-fish sections need different handling; a cooking time for one cut is not a rule for every halibut product.
Choose Your Fish

1. Pan-Seared Halibut

- Bake, checking after about 10 minutes. Continue until the thickest part reaches 145°F. Loosely cover the topping if it browns before the fish is cooked.
- Serve with vegetables and lemon wedges.

4. Halibut in Parchment for Two
Use two 6 oz fillet portions, one small zucchini sliced thinly, ½ bell pepper sliced thinly, 1 tbsp olive oil, 1 tsp chopped dill and two lemon slices.
- Heat the oven to 400°F. Use baking parchment rated for that temperature.
- Divide vegetables between two sheets of parchment. Add fish, oil, dill, lemon and salt and pepper to taste.
- Fold and crimp each sheet into a closed packet and place on a baking tray.
- Bake, checking after about 12 minutes. Open carefully, directing steam away from your face, and check the thickest part of the fish for 145°F. Return to the oven if needed.
Thin vegetable slices help them cook alongside the fish. Tougher vegetables may need a head start.
5. Halibut with Mango Salsa
