How to Store Halibut: Refrigeration, Freezing & Thawing

Start with the Product Condition

Fresh halibut fillet portions and fresh whole halibut ship chilled with gel ice via UPS Overnight. Frozen fillets, steaks and cheeks ship with dry ice. Follow the label for the specific package, including any shorter storage window.

Refrigerating Fresh Halibut

Keep seafood at 40°F or below and plan to use fresh fish within one to two days of purchase, or freeze it promptly. Use a refrigerator thermometer. Place the fish in a clean container that catches drips, away from ready-to-eat foods. These recommendations follow the FDA seafood storage guidance.

Inspect deliveries promptly and follow the receiving instructions. A mild smell or normal appearance alone does not prove that fish has stayed at a safe temperature. If there is an arrival problem, contact us promptly with photos.

Handling Head-Off Whole Halibut

The whole halibut product is supplied head-off and gutted. Large fish may be cut into several large sections to fit the shipping box. Prepare refrigerator space for those sections and portion with clean tools as needed. You do not need to repeat gutting instructions intended for a newly caught fish.

Keep the fish chilled while working in manageable batches. Separate raw-fish utensils and surfaces from ready-to-eat ingredients. Recipe weights should refer to the prepared pieces, not the original whole-fish weight.

Freezing and Packaging

Keep frozen fish at 0°F or below. Follow the package's best-before and storage directions. For fresh fish you freeze at home, divide it into meal-sized portions, use freezer-suitable wrapping, minimize air exposure and label the contents and date.

Packaging, temperature stability and the fish's condition before freezing affect quality. Vacuum packaging does not establish a universal twelve-month shelf life. Freezing also does not repair fish that has already been mishandled.

Read Vacuum-Package Instructions Before Thawing

Read the label before placing frozen fish in the refrigerator. Follow any requirement to remove it from its vacuum packaging before thawing. For home-vacuum-packed fish without thawing instructions, remove the packaging before refrigerator thawing and use a clean covered dish to contain drips.

Thawing in the Refrigerator

Thaw gradually in the refrigerator, following the packaging directions above. Allow extra time for thick pieces or large sections; a single fixed overnight estimate will not fit every cut. Keep the fish in a dish that catches liquid. Do not thaw it on the counter.

When You Need a Faster Method

After following the original packaging instructions, place the fish in a clean leakproof bag and immerse it in cold water. Keep the water cold and cook promptly when thawed. Do not use warm water. See the fish thawing guide for more detail.

Changing Meal Plans

Whether fish can be refrozen depends on how it was thawed and kept cold. Do not use refreezing to rescue fish with an uncertain temperature history. Read the refreezing guide before deciding. For cooked leftovers, refrigerate promptly and follow FoodSafety.gov storage guidance.
