Alaska pollock is a mild, lean whitefish that can fit easily into a balanced diet. But the nutrition of a plain pollock fillet is not the same as the nutrition of a breaded fish stick, a fried sandwich or a surimi product. When evaluating pollock, it is important to separate the fish itself from the finished food made from it.
The nutrition label of the fish is not necessarily the nutrition profile of the meal.
For most people, plain Alaska pollock is a useful source of lean protein and several micronutrients. It also contains omega-3 fatty acids, although pollock should not be presented as nutritionally equivalent to fattier fish such as salmon.
The most accurate way to judge a pollock product is to look at the actual Nutrition Facts and ingredient statement for the product you are eating. Breading, frying oil, sauces, sodium and processing ingredients can change the nutritional profile substantially.
The following values are from NOAA Fisheries for a 100 g raw serving of Alaska pollock. Keeping one serving basis matters: raw, cooked and prepared products should not be mixed in the same nutrition comparison.

Nutrition values vary with portion size, cooking method and the database or product specification being used. For that reason, we avoid mixing values from raw fish, cooked fish and prepared products in one comparison table.
Pollock does not need exaggerated health claims to be useful food. Its practical nutritional advantage is simple: it is a lean source of fish protein that can be prepared in many ways.
Claims that one serving of pollock will promote weight loss, prevent heart disease, improve memory, reduce depression or “boost immunity” go beyond what should be claimed from the species alone. Overall diet, portion size, preparation method and individual health circumstances matter.
Pollock contains omega-3 fatty acids, but consumers should not assume that all seafood provides the same amount. Salmon is a fattier fish and is generally chosen when a higher omega-3 intake is the primary goal. Pollock is better understood as a lean whitefish that provides some omega-3 along with protein and micronutrients.
This distinction matters because older seafood articles often group every fish under the same “high in omega-3” language. That is too broad to be useful.
Mercury guidance should come from current public-health authorities rather than from seafood marketing. The FDA/EPA seafood advice places pollock among the lower-mercury choices in its fish-consumption guidance. Recommendations can differ by age, pregnancy status and individual circumstances, so consumers in those groups should follow the current FDA/EPA guidance and advice from their healthcare professional.
We do not use a universal “eat pollock X times per week” rule because seafood recommendations depend on the person and on the rest of the seafood being consumed.

When evaluating seafood nutrition, look at the product you are actually eating—not only the species name on the front of the package.
No simple “fresh is healthy, frozen is unhealthy” rule makes sense. Freezing is a preservation method. A properly handled frozen pollock fillet can remain a straightforward seafood product.
Quality, processing history and nutrition are related but different questions. A fillet can be frozen once or processed through a thaw-and-refreeze cycle. Those differences may matter for texture, moisture and commercial quality, but they should not be turned into unsupported medical claims.
In a single-frozen production chain, the fish is processed into the final fillet and frozen without a later thawing and secondary refreezing cycle. In a common twice-frozen chain, pollock may first be frozen as headed-and-gutted fish, transported to a secondary processor, thawed, made into fillets and frozen again.
From a seafood-processing perspective, that history can matter to product quality. From a nutrition perspective, however, consumers should still judge the actual finished product by its Nutrition Facts, ingredients and serving size rather than treating “single frozen” as a health claim.

Some seafood products may use phosphates such as sodium tripolyphosphate (STPP) for technological functions including moisture management. STPP is not the same thing as a whitening or bleaching treatment, and the terms should not be used interchangeably.
If ingredients or processing aids are important to your purchasing decision, read the ingredient statement and product specification. We do not assume that every twice-frozen fillet uses phosphates, and we do not claim that a product is phosphate-free unless its specification supports that statement.
