Osetra caviar is sold under many selection names, including Classic, Premium, Royal Crown, Imperial, and Gold. These names can describe differences in pearl size, color, texture, flavor, or producer grading, but they are not universal species names. The most reliable comparison uses the complete product specification.
One important distinction: Siberian sturgeon, Kaluga, and White Sturgeon are separate caviar categories—not types of Osetra. “Osetra” and “Ossetra” are simply common spelling variants.

Royal Crown Ossetra is a Bulgarian-origin selection characterized on its product page by medium-to-large glossy pearls, a clean pop, and rich flavor. It is a strong choice when texture and a traditional dark-pearl presentation are priorities.
Imperial Gold Ossetra is a farm-raised Bulgarian selection with glossy golden-brown pearls and a firm, smooth texture. Choose it when the lighter visual presentation and Imperial Gold profile suit the occasion.
Terms such as Classic, Premium, Royal, Imperial, and Gold are useful within a producer’s own range, but they are not perfectly standardized across the caviar industry. A “Premium” selection from one producer should not be assumed to match the grading criteria of another.
Before buying, compare:
No. Dark, amber, and golden Osetra can all be high quality. Lighter colors may be rarer and can command a premium, but color alone does not guarantee better texture, freshness, or flavor. Look for separate glossy pearls, a clean aroma, a firm delicate pop, balanced salinity, and a clean finish.
Allow about 1/2 ounce per person for a tasting, about 1 ounce for an appetizer, or 1 to 2 ounces for a generous centerpiece. When comparing multiple Osetra selections, smaller portions of each are usually sufficient.
Serve Osetra cold over crushed ice with a neutral spoon. Taste each selection plain before adding blini, toast points, potato chips, roasted potatoes, or crème fraîche. Keep unopened tins refrigerated according to their package instructions, do not freeze them, and refrigerate leftovers promptly.
