Compare by texture and preparation
- Small clams: often firmer than cooked mussels; useful in clam-specific pasta and chowder recipes.
- Oysters: have different shell shapes and handling requirements; choose a recipe designed for their size and format.
- Geoduck: a large clam with a firm siphon and softer body meat, requiring cleaning and cutting.
- Abalone: a marine snail with a muscular foot; frozen abalone needs thawing and a suitable cooking method.
- Shrimp and crab: are crustaceans, and may be sold raw or cooked. Their preparation differs from live bivalves.
Buy the ingredient the recipe needs
