Undercooked Shrimp: Doneness, Thawing & Food Safety
Raw and undercooked shrimp can carry harmful germs. The useful way to reduce risk is to manage storage, prevent cross-contamination and cook thoroughly—not to rely on a “fresh,” “wild” or “sashimi-grade” description.
How to check doneness
FDA seafood guidance recommends cooking most seafood to 145°F and describes cooked shrimp flesh as firm, pearly and opaque. Check the thickest part with a suitable food thermometer when possible. Cooking time varies with size, starting temperature and method.
Shell color alone is not enough: some shrimp are reddish before cooking. A C-shaped or O-shaped curl is also not a dependable safety test. Look at the flesh and use the product’s directions, rather than treating an exact two-minute time as universal.

Thaw and separate
Thaw frozen shrimp in the refrigerator following the packaging directions. Keep raw shrimp and its juices away from cooked food, salads and clean utensils. Wash hands and food-contact surfaces after handling raw seafood.
Does freezing or citrus make raw shrimp safe?
Freezing does not eliminate all harmful germs. Lemon or lime juice can change the appearance and firmness of shrimp without providing the same safety step as heat cooking. For a citrus appetizer, use fully cooked, chilled shrimp.
Cooked shrimp needs different handling
Pacific pink shrimp meat is already cooked. Thaw as directed and keep refrigerated for cold dishes. Do not apply a raw-shrimp searing time to a precooked ingredient simply because both are frozen.

When the delivery or storage condition is questionable
Do not taste questionable seafood to decide whether it is safe. Cooking does not reverse spoilage. Keep the product aside and contact the seller with order information and photographs of the product, label and packaging.
Who should avoid raw seafood?
